TOJIRO’s July 2019 reference separates edge direction from handle shape. The distinction helps explain handedness beyond a knife-type name.

Technique and structure

TOJIRO distinguishes single bevels formed from one side from double bevels formed from both. It describes double bevels as generally usable with either hand; single bevels require attention to handedness. Oval nakiri handles and ridged deba or yanagiba handles illustrate a second question: handle orientation. Check both details on the actual model.

Check the actual model

Some gyuto are single-bevel, TOJIRO notes. The name alone does not establish a model’s handedness or availability.

For international readers

Ask for the exact bevel specification and handle configuration before ordering. A general explanation of manufacturing possibilities is not a quotation of today’s price, lead time or overseas service.
