A care routine needs three separate checks: what remains on the blade, whether it is dry, and how it will be stored. TOJIRO's current guidance provides a useful starting point for carbon-steel kitchen knives. Check the instructions for your particular blade, handle and finish before applying it.

Technique and structure

TOJIRO describes stainless steel as steel alloyed with chromium to reduce rusting. That material term should not be read as permission to leave a knife wet: the maker's daily-care page still warns about salt, acid and damp storage. Its materials guide describes a carbon-steel material used in both Japanese and all-steel Western-style knives. The practical distinction is therefore between the blade's material and its shape: a Japanese-style or Western-style profile alone does not establish the material or the care instructions. Identify the actual blade, handle and finish before choosing a storage routine.

Remove residue before putting the knife away

TOJIRO recommends neutral kitchen detergent and a soft sponge, followed by thorough rinsing. It warns that salt, acid and prolonged damp storage can cause rust; residue from foods such as pickles or lemons should be removed promptly. Do not leave the knife in water or hot water: the maker also identifies handle deterioration as a possible consequence.

Drying is a separate step

Wipe away moisture and let the knife dry before storage. TOJIRO excludes microwave and oven drying, and its longer care article warns against heating the blade over a flame. Its advice does not make accelerated heating a substitute for wiping and drying.

Decide how to protect the dry blade

For carbon-steel knives, TOJIRO describes a thin coating of cooking oil after drying, followed by washing before the next use. Its care article does not recommend dishwasher cleaning. These are attributed care directions, not results of our own corrosion tests or a guarantee for every coating and handle.

The practical order is therefore residue removal, drying, then a storage decision matched to the knife. Sharpening geometry and rust-removal work require their own instructions.

For international readers

Use the blade material and the manufacturer's instructions as the starting point for care, especially when buying a knife from abroad. Check the handle and finish as well as the edge. This guide explains TOJIRO's published directions; it does not replace model-specific instructions or report our own corrosion testing.
