Aimedia’s October 8 notice introduces TOGISU, a matched santoku and case designed to sharpen its blade when it is removed or replaced. The company describes an October general-retail launch, rather than an October 8 release date.

A matched pair, with specific limits

The listed blade length is approximately 16.5 cm. Aimedia identifies molybdenum-vanadium stainless steel for the blade and a finishing ceramic stone inside the case. These descriptions do not establish a particular steel grade, hardness or sharpening angle.

The current product page says the case is designed for the TOGISU santoku alone and warns against inserting other knives. It also excludes dishwasher use. Its care guidance calls for a light water rinse before using the knife, because removing it from the case sharpens the blade, and thorough wiping after washing. These are the supplier’s instructions, not a report of our own sharpening tests.

Aimedia identifies Seki, Gifu, as the knife’s production location and Sanjo, Niigata, as the case’s. The two locations refer to different components of the set. The manufacturer is based in Hiroshima.

The shop displays an add-to-cart option, but its sales disclosure says inventory is checked after order receipt. We therefore do not treat the listing as confirmed immediate availability.
